Green Bean Casserole
Description
This casserole starts by microwaving green beans to just tender before draining well. Mushrooms are cooked with butter, salt, pepper, and garlic until their juices are released. Flour is sprinkled on to thicken the mixture, then low-sodium chicken broth and heavy cream are added and simmered until a smooth sauce forms. This sauce coats the green beans combined with a portion of fried onions to integrate texture. The mixture is transferred to a greased baking dish and baked at 400°F until green beans reach desired tenderness.
The casserole offers smooth, creamy sauce with the slight umami earthiness of mushrooms balanced by the fresh bite of green beans. The fried onions add crunch and a toasted flavor contrast on top. It works well as a side dish accompanying main courses and can be prepared ahead by assembling and refrigerating before baking.
Ingredients
- 2 lbs Green bean fresh, edges trimmed, cut into 2-inch pieces
- 4 tablespoons butter unsalted
- 12 ounces white button mushroom chopped
- 2 cloves garlic minced
- 1 teaspoon kosher salt (more to taste)
- 1/4 /4 teaspoon black pepper (more to taste)
- 1/4 /4 cup flour
- 1 1/2 /2 cups chicken broth low-sodium
- 1 cup heavy cream
- 1 (6 ounce) fried onions French's brand, package
Instructions
- Preheat oven to 400 degrees and grease a 9x13 inch baking dish.
- In a large microwave safe bowl, add the green beans and 3/4 cup water. Microwave on high for 5-8 minutes or until just tender. Drain the beans well and set aside.
- In a large skillet, melt the butter. Add the mushrooms, salt, and pepper and cook until the mushrooms have released their juice. Add the garlic, and cook for an additional 30 seconds.
- Sprinkle the flour on top and cook for a minute. The mixture will be thick. Whisk in the chicken broth and bring to a simmer. Stir in the cream and simmer for 8-10 minutes or until mixture thickens.
- Pour sauce over green beans, 1/2 cup of the fried onions and toss well to combine. Pour into the prepared pan. If making this ahead of time, cover tightly and store in the fridge. You can even cook it in the next step and reheat and add the fried onions the day of.
- Bake for 20-25 minutes or until green beans are to desired doneness (I like mine on the more cooked side). For the last 5 minutes of cooking, sprinkle the remaining fried onions on top and cook until golden brown.
