Green Bean Casserole Recipe

Green Bean Casserole combines tender fresh or frozen green beans with a creamy mushroom soup base seasoned with soy sauce, black pepper, and salt. Baked until hot and bubbling, the casserole is finished with a topping of crispy fried onions browned lightly in the oven. This dish balances fresh green bean texture with a smooth, savory sauce and crunchy onion topping often served as a side in meals.

Description

The Green Bean Casserole Recipe begins by blanching green beans briefly in boiling salted water until tender but crisp, then shocking them in an ice bath to stop cooking and retain color and texture. A creamy sauce is made by combining condensed cream of mushroom soup, whole milk, soy sauce, black pepper, and salt for balanced richness and umami. The cooled green beans are tossed in this sauce and placed in a casserole dish.

Baking at 350°F heats the casserole through and allows the sauce to bubble at the edges. After a brief stir, a layer of crispy French-style fried onions is added on top and baked again until golden brown, adding a crunchy texture contrast. This classic side dish presents a harmony of smooth creamy sauce, fresh green beans, and crunchy onion topping.

For variations, fresh herbs like thyme, rosemary, or sage can be added into the sauce for added freshness. Cheese such as shredded white cheddar, fontina, or gruyere can be blended in for extra creaminess and topped with additional cheese before the fried onions. The ice bath step ensures the beans stay crisp rather than becoming mushy during baking.

Ingredients

Servings
  • 1 pound green beans fresh and trimmed, or frozen) (454g, cut
  • 1 (10.5-ounce/298g) can condensed cream of mushroom soup
  • ¼ cup milk 60mL, whole
  • 2 teaspoons soy sauce
  • ¾ teaspoon black pepper ground
  • ¼ teaspoon salt
  • ¾ cup fried onions 45g, crispy, French style

Instructions

  1. Preheat the oven to 350°F. Fill a large bowl with ice water, and set aside.
  2. Bring a large pot of salted water to a boil over medium-high. Add the green beans, and cook, stirring occasionally, until tender and bright green, 2 to 3 minutes.
  3. Using a slotted spoon, remove the green beans from the boiling water, and place them in the ice bath. Let stand until completely cooled, about 2 minutes. Drain well.
  4. In a large bowl, stir together the mushroom soup, milk, soy sauce, pepper, and salt until well combined. Stir in the cooled green beans until evenly coated. Place the mixture in a 1½-quart casserole dish.
  5. Bake until heated through and just starting to bubble on the edges, about 30 minutes. Stir the mixture then sprinkle the top with the fried onions in an even layer. Continue baking until the onions are browned, about 5 minutes. Let cool for a few minutes before serving.

Notes

  • Use plenty of ice in the water bath to stop cooking and keep green beans crisp and bright.
  • You can add fresh herbs like thyme, rosemary, or dried sage to the sauce for added flavor.
  • Mix in 1 cup of shredded white cheddar, fontina, or gruyere for extra creaminess before baking.
  • Sprinkle additional shredded cheese on top along with fried onions for a bubbly cheesy crust.
