Green Bean Crunch Salad with Peanut Vinaigrette

Green Bean Crunch Salad features blanched green beans tossed with sliced green onions, roasted peanuts, and a tangy peanut vinaigrette made with apple cider vinegar, lime juice, Dijon mustard, honey, and roasted peanut oil. The salad offers crisp green beans with crunchy nuts and a bright, balanced dressing.

Description

This salad combines fresh green beans that are blanched to tender-crisp and shocked in ice water to retain their bright color and crunch. The green beans are dressed with a peanut vinaigrette made from acid components like apple cider vinegar and lime juice, balanced with Dijon mustard and honey, and emulsified with roasted peanut oil for a nutty flavor and smooth texture.

The addition of sliced green onions and chopped roasted salted peanuts contributes extra layers of crunch and savory depth. The vinaigrette can be prepared ahead and stored refrigerated, improving convenience. The salad can be finished with additional lime wedges for added freshness.

Seasoning with salt, pepper, and crushed red pepper flakes allows for adjustable heat and flavor. This salad serves as a refreshing side dish that highlights textural contrasts and a blend of bright, nutty flavors.

  • lime for serving, wedges

peanut vinaigrette

  • 1 tablespoon apple cider vinegar
  • 1 tablespoons lime juice freshly squeezed
  • 2 teaspoons Dijon mustard
  • 1 teaspoon honey
  • salt kosher salt
  • black pepper kosher salt
  • pinch crushed red pepper flakes

Instructions

  1. Start by blanching the green beans. Prepare an ice bath - fill a large bowl with ice and cold water.
  2. Bring a large pot of water to a boil. Once boiling, add the green beans and cook for 3 to 4 minutes. Use a strainer to immediately transfer the beans to the ice bath. Let them chill in the bath for 5 minutes. Pat the beans dry with a paper towel.
  3. Place the beans on the plate and give them a pinch of salt and pepper. Drizzle the dressing all over the green beans. Top with the scallions and chopped peanuts. Taste and season more if needed. Spritz on some lime and enjoy!

peanut vinaigrette

  1. Whisk together the vinegar, lime juice, dijon and honey with a pinch of salt and pepper. Whisk in a pinch of pepper flakes. Slowly stream in the roasted peanut oil while whisking constantly. This stores great in the fridge for a few days, just shake/mix well before using.
