Green Bean Potato Casserole

  • 4 cups red potato diced
  • 2 tablespoons butter (melted)
  • 14.5 ounces green beans (1 can)
  • 6 lices Bacon diced, cooked
  • 2 cups cheddar cheese divided, shredded
  • salt to taste
  • black pepper to taste

Instructions

  1. On the stovetop, heat a medium saucepan with water to boiling. Add the diced potatoes and cook just until tender. The time will depend on how small you have cut the potato cubes so watch them closely.
  2. Preheat oven to 350 degrees and spray a  9x13 by greasing with nonstick cooking spray.
  3. Strain potatoes and place them in the greased pan.
  4. Pour the melted butter over the potatoes, then sprinkle with salt and pepper. Stir to coat the potatoes.
  5. Add green beans, chopped bacon, and one cup shredded cheese. Stir to combine.
  6. Top the mixture with the remaining cheese.
  7. Bake for 20 minutes or until cheese is melted and beans are cooked through.
  8. If you'd like the cheese to get a little browned and crispy on top, put the casserole under the broiler for 2-3 minutes. Watch it closely so it doesn't burn!
