Green Beans Almondine

Green Beans Almondine is a delicious way to dress up ordinary green beans, making them an elegant, Keto side dish that's perfect for the holidays!

Ingredients

  • 1 ½ pounds Green bean fresh
  • ½ cup almonds sliced
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • lemon zest and juice of ½ lemon
  • salt to taste
  • black pepper to taste

Instructions

  1. Wash and trim the green beans, then boil them in salted water for a few minutes or until almost tender. Drain the green beans and add them into a bowl with ice water to stop them from cooking further. This also sets a beautiful green color.
  2. In a large skillet, add in the butter and olive oil and turn the heat to low. Once the butter has melted, add in the almonds and toss to coat.
  3. Once the the almonds just start to toast, stir in the garlic and cook for about 20 seconds. Do not allow the garlic to brown, or it will become bitter.
  4. Add in the green beans, lemon juice, zest, salt and pepper to taste, then toss to coat. Serve once the green beans are warmed through.
