Description
Green Beans and Bacon combines trimmed fresh green beans cooked in a skillet with crispy diced bacon and garlic. Starting with frying bacon until crisp and reserving some bacon grease for sautéing the beans adds a substantial smoky and savory flavor. The beans are cooked to a desired tenderness, slightly browned for caramelization. Adding garlic near the end, along with salt and pepper, enhances the flavor without overpowering the dish. The crisp bacon is folded back in before serving.
The dish is a savory side, pairing well with a variety of mains where a smoky vegetable accompaniment is welcome. The texture contrast between tender green beans and crisp bacon makes it satisfying and interesting.
To prevent the beans from drying out or burning, watch closely during the sauté and add a small amount of water if the bacon grease cooks off. Adjust the bacon crispness to your preference to control the texture.
Ingredients
- 1 1/2 lb Green bean washed with the ends trimmed, fresh
- 6 lices Bacon diced into small pieces
- 2 tsp garlic minced
- 1/2 tsp salt
- 1 tsp black pepper
Instructions
- Cook the chopped bacon in a large pan over medium high heat until the bacon is the crispiness that you prefer.
- Move the bacon to a separate plate.
- Drain off some of the bacon grease from the pan. Leave approximately 2 Tbsp of the grease still in the pan to cook the green beans in.
- Then add in the green beans and sauté the green beans until the are slightly brown and the green beans are cooked to the tenderness that you prefer (10-15 minutes). Watch closely and add a small amount of water if all the grease gets cooked off while cooking.
- Add the minced garlic, salt, pepper and bacon, cook for 1 minute and then serve immediately.
