Green Beans with Bacon
Description
The recipe begins by blanching trimmed green beans briefly in boiling water, then shocking them in ice water to stop cooking and maintain vibrant green color. They are drained and patted dry before sautéing in olive oil with salt, pepper, and minced garlic added toward the end to release flavor without burning. A small amount of water is poured in and the beans are covered to steam until just tender but still crisp. After draining, the green beans are finished with a drizzle of olive oil, seasoning, and topped with chopped cooked bacon for added texture and smoky notes.
This side is well suited to pair with a variety of main dishes, providing a fresh vegetable component enhanced by savory bacon and garlic. Maintaining proper heat and timing during sautéing prevents overcooking and burnt garlic, preserving the dish's clean taste and appealing texture.
Ingredients
- 1 lb Green bean washed and trimmed, fresh
- 2 Tablespoon olive oil divided
- 2 garlic minced, cloves
- ½ teaspoon salt each, freshly ground
- ½ teaspoon black pepper each, freshly ground
- ½ cup water
- ½ cup Bacon chopped, cooked
Instructions
- Blanch green beans in boiling water for about 2 minutes, or until their color turns bright green. Transfer them to a large bowl with ice-cold water. Drain the beans and pat them dry with a paper towel.
- Heat 1 Tbsp olive oil in a large skillet over medium-high heat. Add trimmed green beans to the skillet, season them with salt and black pepper, and saute them stirring often until they are tender for about 3 minutes. (Make sure you don't burn them, reduce the heat if necessary).
- Add minced garlic to the green beans, toss and cook until fragrant for about 30 seconds.
- Pour 1/2 cup water over the green beans and cover the skillet with a lid. Steam the green beans for about 3-4 minutes, until they are bright green and crisp-tender.
- Drain green beans and transfer them to a serving bowl. Drizzle the remaining olive oil over them and season with a little bit of salt and pepper. Top with chopped cooked bacon.
