Green Beans with Bacon
Description
This recipe begins by frying finely diced thick-cut bacon until crisp, then removing it while leaving a small amount of rendered fat in the pan. Thinly sliced onion is cooked in the fat until translucent and slightly caramelized, adding sweetness and depth.
Fresh green beans are added with a little water or chicken broth and seasoned with kosher salt, cooking until tender. Just before finishing, fresh lemon juice and roughly half of the chopped basil and mint are stirred in to brighten the dish. The green beans and onions are served topped with the crispy bacon, remaining herbs, torn burrata cheese for creaminess, lemon zest, and pink peppercorns for mild heat and aroma.
The combination of textures from crispy bacon and creamy burrata complements the tender green beans, while the herbs and lemon bring freshness to the dish. It functions well as an elevated vegetable side for lunches or dinners.
Ingredients
- 8 ounces Bacon finely diced, thick cut
- 1 white onion , very thinly sliced
- 2 pounds Green bean fresh
- kosher salt to taste, coarse
- 1 lemon , juice & zest
- 1/4 cup basil finely chopped, fresh
- 2 tablespoons mint finely chopped, fresh
- 1 burrata cheese ball form
- Pink Peppercorn to taste
Instructions
- Heat a large skillet over medium heat. Add the bacon and cook for 5-6 minutes, until crispy. Remove the bacon from the pan and drain on paper towels.
- Pour out excess fat from the pan, leaving about 1 tablespoon.
- Add the onion to the pan and cook for 6-8 minutes or until translucent and slightly caramelized.
- Add the green beans to the pan along with 2 tablespoons of water (or chicken broth). Season the green beans with salt. Cook the beans, stirring occasionally, until tender, about 5 minutes. Just before removing from the pan, mix in 2 tablespoons of fresh lemon juice and half the basil and mint.
- Transfer the green beans and onions to a serving dish. Top with bacon, remaining herbs, torn burrata, fresh lemon zest and pink peppercorns.
