Green Beans with Bacon, Pecans and Blue Cheese
Description
This recipe highlights green beans cooked until just tender by boiling briefly and refreshing in ice water to preserve their bright color and texture. They are then sautéed in rendered bacon fat, infusing a smoky flavor. Crisp cooked bacon is chopped and combined with the beans, along with candied pecans for a sweet crunch and blue cheese that adds a rich, tangy note. The seasoning with kosher salt and black pepper balances the components without overwhelming them.
The cooking method balances freshness and savory indulgence, maintaining the green beans’ bite while layering flavors from the bacon drippings and toppings. The pecans introduce a sweet contrast, complementing the salty bacon and pungent blue cheese for a rounded flavor profile.
This dish works well alongside roasted meats or poultry and can be served warm or at room temperature. The notes mention adaptations for frozen or canned green beans, providing flexibility. The pecans should be chopped and preferably candied to maximize their texture and sweetness in the context of this recipe.
Ingredients
- 1 lb green beans ends trimmed
- 3 lices Bacon
- 4 oz blue cheese crumbled
- ½ cup pecans chopped, candied
- ½ tsp black pepper ground
- ½ tsp kosher salt
Instructions
- Bring a large pot of water to boil on the stove over high heat.
- Add the green beans and cook for 3 minutes.
- Drain the green beans and immediately place them in a bowl of ice water for 3 minutes.
- Remove the beans from the ice water and set aside.
- Add the bacon slices to a large skillet on the stove over medium high heat.
- Cook the bacon slices for 4-5 minutes per side, or until crisp.
- Remove the slices of bacon from the skillet and place them on a paper towel lined plate to drain the grease.
- Add the green beans to the bacon drippings in the skillet on the stove over medium high heat, sauté for 2-3 minutes.
- Chop the cooked bacon and add it to the green beans with the blue cheese, chopped pecans, salt and pepper.
Notes
- When using frozen green beans, increase boiling time to 5 minutes before ice bath.
- For canned green beans, skip blanching and ice bath steps; drain and sauté directly in bacon drippings for 3-4 minutes.
- Chopped candied pecans add a sweet contrast to the savory bacon and blue cheese components, enhancing texture.
