Green Beans with Mushrooms Recipe

This Green Beans with Mushrooms recipe combines fresh or frozen green beans with button mushrooms and onions sautéed in olive oil and butter. Seasoned with soy sauce and sesame oil, the dish balances fresh green beans' crisp-tender texture with the savory earthiness of mushrooms and the aroma of sesame, providing a flavorful vegetable side.

Description

The recipe starts by boiling fresh green beans to a crisp-tender texture or heating frozen ones per package instructions, then cooling them immediately to halt cooking. Mushrooms and onions are sautéed in a mix of olive oil and butter until tender and lightly browned. The cooked green beans are then added to the skillet along with soy sauce and sesame oil for seasoning, and any additional salt or pepper as needed. A final quick sauté blends the flavors before serving.

The resulting dish offers tender green beans with the umami depth of mushrooms and the warm aroma of sesame oil. It works well as a side to a variety of meals, supplementing proteins with a vegetable option that is easy to prepare and subtly flavorful.

Ingredients

Servings
  • 1 lb green beans fresh or frozen (trim them or buy pre-trimmed if they are fresh)
  • 1 Tbsp olive oil
  • 1 Tbsp butter unsalted
  • 8 oz button mushrooms cleaned and sliced, fresh
  • 1 onion about 4 Tbsp diced, small
  • 1 Tbsp soy sauce
  • 1 tsp sesame oil
  • salt if needed, to taste
  • black pepper if needed, to taste

Instructions

  1. If using frozen green beans, follow the stovetop cooking instructions on the package. If using fresh green beans trim the ends on all the green beans (this can be tedious) Or you can just buy pre-trimmed beans which are a bit spendier. Fill a medium pot 2/3 with water and bring to a rapid boil. Add beans and boil 6 to 7 minutes, until crisp-tender.
  2. Drain beans immediately and rinse them with cold water to stop the cooking process, set beans aside.
  3. Heat a large skillet over med/high heat. Add 1 Tbsp olive oil and 1 Tbsp butter. Add mushrooms and onions and saute until tender (3-5 min).
  4. Add cooked beans to the skillet and drizzle with 1 Tbsp soy sauce and 1 tsp sesame oil. Sprinkle with salt and pepper if needed, then stir everything to combine. Saute an extra minute, and it's done!
