Ingredients
Peanut Sauce:
- 1/2 cup creamy peanut butter
- 3/4 cup coconut milk
- 2 tablespoons Thai red curry paste
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar or to taste
- 2 tablespoons ground peanut
- salt to taste
Instructions
- Trim the ends of the green beans, rinse them, and set aside.
- Add all the peanut sauce ingredients to a saucepan. Use a whisk to mix everything together quickly before placing the pan on the stovetop over low heat. Continue whisking the sauce until the ingredients are fully combined.
- As soon as the sauce starts to bubble, turn off the heat. If you prefer a thinner sauce, you can add a little water to dilute it while cooking. Remove from the heat and set aside.
- In a pan, add the oil and sauté the garlic until it turns light brown. Add the green beans and stir continuously until they are tender. Transfer to a serving plate, pour some peanut sauce over the green beans, and sprinkle with ground peanuts. Serve immediately.
