Green Goddess Dressing
Description
Green Goddess Dressing combines a mix of fresh herbs—parsley, watercress, chives, tarragon, and dill—to provide a vibrant, herbal base. These are blended with fresh lemon juice, extra virgin olive oil, garlic, and anchovies, which add depth and umami. Mayonnaise finishes the dressing, smoothing out the texture and balancing acidity. The result is a creamy, green-hued dressing that complements salads or can be spread on sandwiches.
The dressing’s preparation involves processing all fresh herb ingredients and seasonings together until smooth, then combining with mayonnaise to maintain a thick, velvety consistency. Salt and freshly cracked pepper are added to taste, allowing adjustment for personal preference. The dressing keeps well refrigerated for at least a week, making it convenient to prepare in advance.
Ensuring the greens are thoroughly dried before blending prevents watery dressing, keeping the texture rich and cohesive.
