Description

It stores well refrigerated in an airtight container for up to five days, retaining its fresh flavors during that time.
For a vegan alternative, raw cashews blended with water can replace the yogurt base, though this requires a high-speed blender and may need adjustments with olive oil or water to reach a creamy consistency. This version is not well suited to a food processor due to the texture of blended cashews.
Ingredients
- 1 cup Greek yogurt whole milk
- 1 cup parsley fresh
- 1 cup mixed soft leafy herbs dill, mint, tarragon and/or cilantro
- 2 tablespoons chives chopped
- 2 tablespoons lemon juice plus ½ teaspoon zest, fresh
- 1 tablespoon extra-virgin olive oil
- 2 teaspoons capers
- 1 garlic clove
- ¼ teaspoon salt sea salt
- black pepper freshly ground
Instructions
- In a food processor, combine the yogurt, parsley, mixed herbs, chives, lemon juice, zest, olive oil, capers, garlic, salt, and pepper. Pulse until well combined. Season to taste.
- Serve as a dip or toss with salad greens. Store in an airtight container in the fridge for up to 5 days.
Notes
- This recipe yields just over 1 cup of dressing.
- To make vegan Green Goddess Dressing, substitute Greek yogurt with raw cashews blended with water and use a high-speed blender for creaminess.
- If the vegan dressing is too thick, thin it with additional water or olive oil to reach desired consistency.
