Ingredients

Servings
  • ½ cup Greek yogurt
  • ½ cup mayonnaise
  • ¼ cup lemon juice fresh
  • 2 tablespoons white wine vinegar
  • ½ cup Parmesan Cheese finely grated, 1 ounce or 30g, Parmesan Reggiano preferred
  • ¼ cup neutral flavored oil
  • 1 teaspoon anchovy paste
  • ½ teaspoon Worcestershire sauce
  • 3 garlic medium cloves
  • 2 cups baby spinach leaves packed
  • 1 cup Italian parsley loosely packed (don't include the lower tough stems, or curly parsley, leaves and delicate stems
  • 1 cup basil loosely packed, fresh leaves
  • 1 cup cilantro loosely packed, fresh leaves
  • 3 tablespoons chives green onion, chopped, or green tops of scallions
  • 3 tablespoons dill optional, chopped fresh, or mint
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper freshly ground

Instructions

  1. Combine the Greek yogurt, mayo, lemon juice, white wine vinegar, Parmesan, oil, garlic and anchovy paste in a blender container. Blend until nice and smooth, 1-2 minutes.
  2. Add the spinach, herbs and kosher salt. Blend again until smooth and bright green. The color will deepen as the herbs are blended. (How long to blend will depend on the strength of your blender.)
  3. Transfer the mixture to a glass jar or storage container. Stir in the pepper.
  4. Store in the refrigerator when not in use. This dressing keeps well for 4-5 days in an airtight container.
