  • 4 potato medium
  • 4-5 tbsp milk
  • 2-3 tbsp barbecue sauce
  • salt to taste
  • 3 lices Bacon cooked and crumbled
  • 3/4 cup cheddar cheese divided, shredded
  • green onion for garnish

Instructions

  1. Place whole potatoes on a plate and microwave on high for 8-10 minutes, until cooked through (you can check if they're cooked by piercing with a sharp knife -- the knife should go in and come out easily with little resistance). Let cool for 5-10 minutes. Slice in half and scoop out potato in the middle, leaving enough around the edge for a sturdy shell.
  2. Mash removed potato with milk, barbecue sauce and salt. Stir in bacon (reserving some for garnish if desired) and 1/2 cup cheddar cheese. Divide mashed potatoes between potato shells (*At this point you can refrigerate up until ready to cook and serve).
  3. Preheat the grill to roughly 400 degrees F. Increase heat on one side of the grill and turn heat off on the other. Place potatoes on the side with the heat off, and grill for 15-20 minutes until heated through. Sprinkle with additional cheese, bacon and green onion if desired.
