Grilled BBQ Chicken
Description
The chicken leg quarters are salted and grilled on a high heat until nearly cooked through, developing crispy skin. A mixture of BBQ sauce diluted with a little water is brushed on multiple times during the remaining grilling to create layers of flavorful glaze. The chicken finishes cooking to an internal temperature of at least 170°F in the thickest part of the thigh, ensuring juiciness and safety.
This method results in a chicken with a combination of charred, caramelized BBQ flavor and tender, moist meat beneath the crisp skin. The chicken is served immediately to enjoy the contrast of textures and warm glaze.
Ingredients
- 4 chicken leg quarters or the equivalent, e.g. a whole chicken cut into 8-10 pieces, 10 legs, etc.
- 1/3 cup BBQ sauce
- 1-2 Tablespoons water
- salt
Instructions
- Mix BBQ sauce with a tablespoon or two of water to make it easy to spread with a brush. Set aside.
- Salt the chicken on all sides. Grill on a hot grill, flipping once or more, until skin is crisp and chicken is almost cooked through, about 20 minutes (temp should be about 160F in thickest part of thigh).
- Brush BBQ sauce on to both sides of the chicken. Continue grilling, flipping once or more and reapplying additional sauce if desired.
- Remove from grill when cooked through (temperature at least 170F in thickest part of thigh or 165F in breast), crispy and starting to develop a slight char. Serve immediately.
