  • 1 yellow onion cut into 2 inch chunks, large
  • 1 red pepper cut into squares
  • parsley for serving, chopped

Instructions

  1. In a large bowl, place the olive oil, lemon juice, garlic, cumin, paprika, cardamom, salt and pepper, and whisk to combine. Add the beef chunks and stir to coat. Allow the beef to marinate for at least 2 hours or up to 24 hours.
  2. Soak wooden skewers in a bowl of cold water for 30 minutes, if using. Preheat the grill on high heat.
  3. Thread the marinated beef and vegetables onto the skewers. Place the beef kabobs on the preheated grill and brush any leftover marinade on top. Cook for 8 minutes total, flipping the skewers every 2 minutes.
  4. Allow the beef kabobs to rest covered in aluminum foil for 5 minutes before serving.
