Grilled Bourbon Maple Wings

Grilled bourbon maple wings are chicken wings marinated with olive oil, apple cider vinegar, and a homemade BBQ rub, then grilled to achieve a charred exterior. They are finished with a bourbon and pure maple syrup sauce cooked with grated onion and tomato paste, giving the wings a glossy, sweet, and savory coating.

Description

This recipe starts by marinating whole chicken wings in olive oil, apple cider vinegar, and a BBQ rub, which can be prepared ahead for deeper flavor. The wings are chilled for at least 30 minutes and up to overnight to absorb the marinade. The BBQ sauce combines melted butter, grated onion, bourbon, pure maple syrup, tomato paste, Worcestershire sauce, oregano, salt, and pepper, simmered gently to develop a rich, balanced sauce.

The wings are grilled on medium-high heat until slightly charred on each side, then slathered with the sauce and briefly cooked longer to set the glaze. The use of whole wings provides a combination of drumette and wingette meat for a variety of textures. Using pure maple syrup and a recommended homemade rub highlights the nuanced flavor profile of the wings.

These wings are best served immediately with extra sauce on the side. The recipe suggests whole wings but notes that "party wings" can be used with a shorter cooking time. The alcohol content from bourbon cooks off during simmering and grilling, leaving flavor depth.

Ingredients

Servings

FOR THE WINGS

  • 2 lbs chicken wings whole
  • 2 tablespoon olive oil
  • 2 tablespoon apple cider vinegar
  • ½ cup bbq rub

FOR THE SAUCE

  • 2 tablespoon butter unsalted
  • ¼ cup onion grated on the medium holes of a box cutter
  • ½ cup bourbon
  • ¾ cup maple syrup pure
  • 2 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon oregano dried
  • ½ teaspoon salt
  • ¼ teaspoon black pepper freshly ground

Instructions

DO AHEAD

  1. Make the Perfect BBQ Rub.

MARINATE THE WINGS

  1. Place the wings in a large bowl and add the oil, vinegar, and BBQ rub and toss with large wooden spoons until the wings are completely coated. Cover with plastic wrap and chill in the refrigerator for 30 minutes, or up to overnight.

MAKE THE BBQ SAUCE

  1. Melt the butter in a medium-sized saucepan over medium heat. Add the grated onions and cook for three minutes.
  2. Add the bourbon, maple syrup, tomato paste, Worcestershire sauce, oregano, salt and pepper, and stir to incorporate.
  3. Simmer for 5 minutes. Remove from heat and set aside.

GRILL THE WINGS!

  1. Fire up your grill to medium-high heat.
  2. Once the grill is ready, add wings to the grill.
  3. Cook on each side until slightly charred, about 5 minutes per side.
  4. Slather on the BBQ sauce, and cook for another 2 minutes each per side.
  5. Remove and serve immediately with remaining BBQ sauce

Notes

  • For best flavor, use the recommended homemade BBQ rub; it complements the sauce well.
  • Whole chicken wings provide the full wing experience, but party wings can be substituted by reducing grill time to 3-4 minutes per side.
  • Use pure maple syrup, not imitation, to achieve the intended flavor balance.
  • The bourbon's alcohol cooks off during cooking; the sauce and rub can be made up to 2 days ahead.
  • Marinate wings for at least 30 minutes; overnight marinating enhances flavor.
  • Serve with extra sauce and plenty of napkins due to the sticky glaze.
