Description
This recipe begins by trimming and halving Brussels sprouts, then microwaving them briefly to start softening without overcooking. After tossing with diced red onion and butter, the mixture is sealed in a heavy-duty foil packet to grill over medium-high heat. Turning the packet intermittently cooks the sprouts evenly, producing a tender interior with slight browning on the outside.
The addition of butter and onion adds richness and savoriness, while simple seasonings keep the focus on the natural flavor of the sprouts. Optionally, larger sprouts can be grilled directly for more char, or garnished with Parmesan cheese to add saltiness and depth.

Ingredients
- 1½ pounds Brussels sprouts halved if large
- 2 tablespoons butter
- ¼ small red onion finely diced
- salt to taste
- black pepper to taste
Instructions
- Rinse the Brussels sprouts under cool water and trim off the ends. Cut in half if they are large.
- Place Brussels Sprouts in a microwave safe bowl and cover tightly with plastic wrap. Microwave for 2-3 minutes or until they just start to soften. Do not overcook.
- Preheat grill to medium-high heat.
- Add diced onion, butter & seasonings to the Brussels. Toss well.
- Lay out a sheet of aluminum foil approximately 24-inches in length. Spread out the Brussels on one half of the foil, and fold the other half over top. Roll the edges of the foil on all sides to create a tightly sealed packet.
- Grill on medium high heat for 8-12 minutes, turning occasionally, until tender and lightly browned.
Notes
- Place larger Brussels sprouts directly on the grill after microwaving for extra color and char.
- Sprouts can also be cooked in a grill basket or on skewers for ease of handling.
- Use heavy-duty foil for grilling packets to prevent tearing when flipping the sprouts.
- Garnish with Parmesan cheese for added flavor if desired.
