Grilled Buffalo Shrimp with Blue Cheese Dipping Sauce
Description
Grilled Buffalo Shrimp with Blue Cheese Dipping Sauce combines peeled and deveined large shrimp with a marinade of olive oil, lemon juice, salt, pepper, and a spicy hot sauce blended with melted butter. Grilling over medium-high heat imparts a slight char while keeping the shrimp juicy. The accompanying blue cheese dipping sauce mixes sour cream, buttermilk, crumbled blue cheese, Worcestershire sauce, lemon juice, and scallions for a creamy, sharp contrast.
The dish is served with celery and carrot sticks and lemon wedges, creating a platter of textures and flavors that work well as an appetizer or light entrée. The hot, buttery shrimp highlight a smoky heat, balanced by the cooling, tangy dip and crunchy vegetables.
Preparing the sauce ahead and refrigerating it enhances its flavors. The shrimp cook quickly on the grill, and tossing them in the sauce after grilling ensures they remain well-coated and flavorful. This straightforward grilling recipe makes for a satisfying, bold-flavored treat.
