Grilled Buffalo Wings
Description
The Grilled Buffalo Wings recipe starts by simmering a blend of hot sauce, garlic, sliced jalapenos, butter, and Worcestershire sauce to develop the sauce. Chicken wings are marinated in part of this mixture before grilling over oiled grates at about 375°F to 425°F. The wings cook for approximately 25 minutes, turning occasionally to cook through while achieving slightly charred spots on the skin. The reserved sauce can be used for tossing the wings or serving alongside.
This method balances the heat and richness of the sauce with the smoky flavors from grilling, yielding chicken wings with a spicy tang and moist interior. Adjusting jalapeno slices can modulate the heat intensity according to taste. Grilling ensures the skin crisps up while keeping the meat juicy.
These wings can be served as a main dish, snack, or appetizer with dips or side salads. The grilled finish offers a variation from traditional fried Buffalo wings, providing a smoky, buttery alternative.
Ingredients
- 1 1/2 cups hot sauce Frank's Original Red Hot Sauce recommended
- 4 teaspoons garlic chopped
- 2 jalapeno pepper sliced
- 6 tablespoons butter
- 2 teaspoons Worcestershire sauce
- 3 pounds chicken wings cut into two pieces (you may want to cut off the wing tips)
- vegetable oil for the grill
Instructions
- In a small pot, combine the hot sauce, garlic, jalapeño peppers, butter, and Worcestershire sauce over low heat.
- Simmer for about 30 minutes, stirring to combine until the butter melts.
- Place the chicken wing pieces in a large container.
- Pour 1 cup of the sauce over the chicken, and marinate for at least 30 minutes. Reserve the remaining sauce.
- Heat the grill to approximately 375°F to 425°F.
- Pour about 1 tablespoon of vegetable oil on a paper towel, and rub the oiled towel over the grates to lubricate the grill.
- Remove the wings from the marinade, allow the excess marinade to drip off, and discard the used marinade.
- Place the wings on the grate in a single layer so they’re not touching (if needed, cook them in batches).
- Cover the grill and cook, flipping the wings occasionally with tongs, until they’re no longer pink at the bone and the skin is slightly charred in spots, about 25 minutes total.
- When all of the chicken wings are done, place them a bowl, drizzle with the remaining sauce.
- Serve with ranch or blue cheese dressing if desired.
