Grilled Caprese Sandwich

Description

The Grilled Caprese Sandwich starts by melting butter in a pan over medium heat. Two slices of bread are placed in the pan and topped with thin slices of mozzarella cheese and small tomatoes. Another pair of bread slices is placed on top to form sandwiches. They are cooked for several minutes per side, until the bread is golden brown and the cheese has melted. Care is taken to lower heat if the bread browns too quickly before the cheese melts.

After cooking, the top slices of bread are lifted off briefly to layer fresh basil leaves and thin slices of ripe avocado on top of the tomatoes. The bread slices are replaced to complete the sandwich, which is served immediately to enjoy the warm cheese with fresh ingredients.

  • 4 lices bread Sara Lee Artesano brand
  • 4 ounces mozzarella cheese thinly sliced
  • 2 tomatoes thinly sliced, small
  • 1 tablespoon basil fresh leaves
  • 1/2 avocado thinly sliced
  • 1 tablespoon butter

Instructions

  1. In a large pan melt the butter over medium heat.
  2. Place 2 slices of bread in the pan and top with the mozzarella and tomatoes. Place the other 2 slices of bread on top.
  3. Cook for 3-5 minutes on each side or until cheese is melted. Watch carefully to make sure that the bread does not get overly browned; if the bread is browned but the cheese still needs time to melt, lower the heat level.
  4. Lift the top slices of bread off the sandwiches and layer the basil and avocado on top of the tomatoes. Place the bread slices back on top and serve immediately.
