Grilled Cheese

This Grilled Cheese sandwich uses sourdough bread spread with mayonnaise and Dijon mustard on the inside and outside to create a crispy, flavorful crust. A combination of sharp cheddar and Gruyère or raclette cheeses melts to a gooey filling, delivering a rich and satisfying texture contrast between the crispy bread and creamy cheese.

Description

The recipe assembles the sandwich by spreading mayonnaise on the outside of the bread slices and Dijon mustard on the inside side of one slice. Grated sharp cheddar cheese and Gruyère or raclette cheese are layered on top of the mustard, then the sandwich is closed with mayo-spread bread outer sides. Cooking takes place over medium-low heat with butter melted in a skillet to coat the pan, allowing the bread to toast slowly and the cheese to melt thoroughly without burning. Covering the pan helps promote even melting of the cheese. Cooking times are about 2-3 minutes per side until golden brown and crisp.

The result is a sandwich where the exterior has a buttery, crunchy texture and the inside holds melted, flavorful cheese with a slight tang from the mustard, offering a balance of crispness and creaminess. The mayonnaise contributes to a golden crust and subtle tang.

This grilled cheese is suitable as a comforting quick meal or snack, easily paired with soups or salads.

Ingredients

Servings
  • 2 lices sourdough bread
  • mayonnaise
  • Dijon mustard
  • 1 to 2 ounces cheddar cheese depending on the size of your bread, grated sharp
  • 1 to 2 ounces gruyere cheese depending on the size of your bread, grated, or raclette cheese
  • butter for the pan

Instructions

  1. Place the bread slices on a cutting board and spread the top side with a thin layer of mayo. Flip one slice of bread and spread its other side with Dijon mustard. Layer the cheddar and Gruyère or Raclette cheeses on top of the mustard, then place the other slice of bread on top of the cheese, mayo side out.
  2. Heat a nonstick or cast-iron skillet over medium-low heat and melt enough butter in the bottom of the pan to coat it. Place the sandwich in the pan, cover, and cook for 2 to 3 minutes, or until the bottom slice of bread is golden brown and crisp. Flip, replace the lid, and cook until the other slice of bread is golden brown and the cheese is melted, 1 to 3 minutes. Reduce the heat to low if the bread is getting too brown before the cheese is fully melted.
  3. Slice and serve.
