Grilled Cheese Roll Ups

Grilled Cheese Roll Ups are slices of white bread rolled flat, filled with cheddar cheese, then rolled up, secured, buttered, and pan-fried until golden and melted inside. This creates a crispy, buttery outside with a gooey cheese center. They can be eaten as a snack or light meal and are easy to store and reheat.

Description

The recipe calls for crusts removed from white bread slices, which are then flattened with a rolling pin to make them pliable. Each slice is filled with cheddar (or a similar cheese), rolled tightly, and secured with a toothpick to hold its shape. The roll-ups are brushed or rolled in melted butter, then cooked seam-side down in a pan over medium heat, turning to brown all sides and melt the cheese fully.

This method produces a crisp, buttery exterior and warm, melted cheese interior. Starting with the sealed side down prevents the rolls from unrolling during cooking. The use of melted butter on the outside encourages even browning and flavor. The recipe suggests choosing fresh bread to prevent breakage when rolling.

Leftover roll-ups can be refrigerated up to three days and reheated in a dry pan or air fryer for crispness. Removing toothpicks after the rolls have browned allows even cooking on all sides. Crusts removed can be dried and crushed for breadcrumbs, reducing waste.

Ingredients

Servings
  • 8 lices white bread crusts removed
  • 8 lices cheddar cheese or Monterey Jack, Colby, Swiss, sharp
  • butter as needed, melted

Instructions

  1. Using a rolling pin, roll slices of bread flat.
  2. Place one slice of cheese (or 2-3 tablespoons grated cheddar). Roll up bread & cheese and secure with a toothpick.
  3. Brush the outside with melted butter (or you can quickly roll them in the butter) and place in a pan, seam side down, over medium heat.
  4. Turn with tongs until all sides are browned and cheese is melted.

Notes

  • Use fresh bread to avoid cracking when rolling; older bread can be dry and brittle.
  • Begin cooking seam side down to seal the roll and prevent it from opening while frying.
  • Additional melted butter may be needed during cooking to ensure even browning.
  • Store leftovers in the refrigerator for up to 3 days and reheat in a dry pan or air fryer for best texture.
  • Save removed bread crusts by drying and crushing them for breadcrumbs in other recipes.
