Ingredients
- 20 oz chicken breast cut into 5 pieces, boneless, skinless
- 4 tsp Dijon mustard
- 2 tsp soy sauce

- 2-3 tbsp lemon juice
- 1 tbsp olive oil
For the Salad
- 3 oz arugula
- 1 tbsp olive oil
- 1 tbsp honey
- lemon juice to taste
- 1/4 cup feta cheese
- salt
For the Remoulade
- 3 tbsp mayonnaise
- 2 tbsp dill relish
- lemon juice to taste
- 5 Hamburger Bun
- 1 large tomato
Instructions
For the Chicken
- Pound the chicken breast so it is of even thickness throughout. You want it to be around ½ inch thick for optimal cooking. Cut into 5 pieces that are roughly bun sized.
- In a bowl mix together the chicken marinade. Stir and adjust flavor as preferred. Add chicken & marinade at room temp for 30 minutes. Start your grill.
- Grill the chicken for 3-4 minutes on each side or until cooked through.
For the Salad
- Mix together the arugula, oil, lemon, honey and feta. Adjust flavor as needed.
For the Remoulade
- Mix together the mayo, relish, and lemon juice. Pepper to taste.
Plating
- Cut the tomato.
- Toast the waffles/buns.
- Spread a layer of the mayo on each bun. Top with chicken, tomato, and salad mix.
