  • 4 tsp Dijon mustard
  • 2 tsp soy sauce
  • 1 tsp garlic powder
  • 2-3 tbsp lemon juice
  • 1 tbsp olive oil

⁣For the Salad

  • 3 oz arugula
  • 1 tbsp olive oil
  • 1 tbsp honey
  • lemon juice to taste
  • 1/4 cup feta cheese
  • salt

⁣For the Remoulade

  • 3 tbsp mayonnaise
  • 2 tbsp dill relish
  • lemon juice to taste
  • 5 Hamburger Bun
  • 1 large tomato

Instructions

For the Chicken

  1. Pound the chicken breast so it is of even thickness throughout. You want it to be around ½ inch thick for optimal cooking. Cut into 5 pieces that are roughly bun sized.
  2. In a bowl mix together the chicken marinade. Stir and adjust flavor as preferred. Add chicken & marinade at room temp for 30 minutes. Start your grill.⁣
  3. Grill the chicken for 3-4 minutes on each side or until cooked through.

For the Salad

  1. Mix together the arugula, oil, lemon, honey and feta. Adjust flavor as needed. ⁣

For the Remoulade

  1. Mix together the mayo, relish, and lemon juice. Pepper to taste. ⁣

Plating

  1. Cut the tomato⁣.
  2. Toast the waffles/buns. ⁣
  3. Spread a layer of the mayo on each bun. Top with chicken, tomato, and salad mix. ⁣
