Ingredients
- 1 pound boneless skinless chicken breasts
- 2 tablespoons olive oil
- 2 teaspoons Italian seasoning
- Salt, to taste
- ground black pepper, to taste
- 4 cups chopped romaine lettuce
- 1 Sliced avocado
- 1 pint halved cherry tomatoes
- 1 cup croutons
- ½ cup shaved or shredded parmesan
Asiago Caesar Dressing
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 teaspoon minced garlic
- ½ teaspoon ground black pepper
- ¼ cup mayonnaise
- ¼ cup olive oil
- ½ cup shredded Asiago cheese
Instructions
- Preheat the grill to medium-high heat.
- Rub 1 pound boneless skinless chicken breasts with 2 tablespoons olive oil, 2 teaspoons Italian seasoning, salt, and ground black pepper,.
- Grill the chicken on each side for 2-4 minutes until it is cooked through and reaches 165 degrees Fahrenheit. Slice the chicken.
- In a large bowl add 4 cups chopped romaine lettuce, 1 sliced avocado , 1 pint halved cherry tomatoes, 1 cup croutons, ½ cup shaved or shredded parmesan, and top with the sliced chicken. Toss together.
- To make the dressing, combine 1 teaspoon dijon mustard, 1 teaspoon Worcestershire sauce, 1 teaspoon minced garlic, ½ teaspoon ground black pepper, ¼ cup mayonnaise, ¼ cup olive oil, and ½ cup shredded asiago cheese in a medium bowl.
- Drizzle the dressing over the salad and serve immediately.
