Ingredients

  • 1 pound chicken breast boneless skinless
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • salt to taste
  • ground black pepper to taste
  • 4 cups romaine lettuce chopped
  • 1 avocado sliced
  • 1 pint cherry tomato halved
  • 1 cup croutons
  • ½ cup Parmesan Cheese shaved or shredded

Asiago Caesar Dressing

  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic minced
  • ½ teaspoon black pepper ground
  • ¼ cup mayonnaise
  • ¼ cup olive oil
  • ½ cup Asiago cheese shredded

Instructions

  1. Preheat the grill to medium-high heat.
  2. Rub 1 pound boneless skinless chicken breasts with 2 tablespoons olive oil, 2 teaspoons Italian seasoning, salt, and ground black pepper,.
  3. Grill the chicken on each side for 2-4 minutes until it is cooked through and reaches 165 degrees Fahrenheit. Slice the chicken.
  4. In a large bowl add 4 cups chopped romaine lettuce, 1 sliced avocado , 1 pint halved cherry tomatoes, 1 cup croutons, ½ cup shaved or shredded parmesan, and top with the sliced chicken. Toss together.
  5. To make the dressing, combine 1 teaspoon dijon mustard, 1 teaspoon Worcestershire sauce, 1 teaspoon minced garlic, ½ teaspoon ground black pepper, ¼ cup mayonnaise, ¼ cup olive oil, and ½ cup shredded asiago cheese in a medium bowl.
  6. Drizzle the dressing over the salad and serve immediately.
