Grilled Chicken Legs
Description
This recipe calls for seasoning chicken drumsticks with olive oil and a spice mix of salt, black pepper, garlic powder, onion powder, paprika, ground mustard, and optional cayenne for heat. After coating, the chicken is grilled over direct medium-high heat at roughly 400°F. Flipping every 10 to 15 minutes ensures even cooking and browning. The target internal temperature is 185°F to guarantee cooked-through and tender meat.
The grilling process develops a flavorful crust while keeping the inside juicy. Resting the chicken for at least 5 minutes after grilling allows juices to redistribute. As a flexible protein, the drumsticks can be served as a main course or part of casual meals.
For convenience, the recipe includes an oven method: baking at 400°F for 30 to 40 minutes with intermittent flipping. Leftovers should be stored in airtight containers and remain good for up to five days in the refrigerator.
Ingredients
- 2 lb chicken drumstick
- 2 Tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp ground mustard
- 1/4 tsp cayenne pepper optional
Instructions
- Preheat your grill over medium high heat to approximately 400 degrees F. Spray the grill grates with a non-stick cooking spray or rub with oil to prevent the chicken from sticking to the grates.
- Mix the seasonings together in a small bowl.
- Pat the drumsticks dry and place them in a large bowl, pour the oil on top and sprinkle the seasonings over the drumsticks. Toss to make sure that the drumsticks are thoroughly coated in the olive and the seasoning mixture.
- Place the drumsticks on direct heat and grill for 25-30 minutes flipping every 10-15 minutes until the chicken reaches an internal temperature of 185 degrees F.
- Then remove the drumsticks from the grill and allow it to rest for at least 5 minutes and then the chicken is ready to serve and enjoy!
Notes
- Leftover grilled chicken legs can be refrigerated in an airtight container for up to five days.
- To prepare without a grill, bake the drumsticks at 400°F for 30 to 40 minutes, flipping every 10 to 15 minutes until fully cooked.
