Grilled Chicken Parmesan
Description
This Grilled Chicken Parmesan recipe starts by marinating chicken breasts in olive oil combined with balsamic vinegar, minced garlic, dried basil, salt, and pepper. The marination enhances flavor and moisture. After marinating at least 30 minutes or overnight, the chicken is grilled on a hot grill first on one side, then flipped to cook the other, achieving grill marks and slight charring.
Once grilled, each chicken breast is topped with a slice of tomato and fresh mozzarella, then covered briefly on the grill to allow the cheese to soften without melting off. The finished chicken is plated on a bed of warmed tomato basil pasta sauce, sprinkled with freshly grated Parmesan cheese and fresh basil leaves, with a pinch of crushed red pepper flakes if desired for mild heat.

Ingredients
- 1 1/2 pounds chicken breast you want about 4 to 5 chicken breasts, Simply Nature Organic brand
- ⅓ cup olive oil Specially Selected brand
- 3 tablespoons balsamic vinegar Priano brand
- 2 garlic minced, cloves
- 1 tablespoon dried basil Stonemill brand
- salt kosher salt
- black pepper kosher salt
- 2 campari tomatoes sliced
- 8 ounces fresh mozzarella cheese sliced, Emporium Selection brand
- 1 ½ cups tomato basil pasta sauce warmed, Simply Nature brand
- ⅓ cup Parmesan Cheese freshly grated, Emporium Selection brand
- basil fresh, handful, leaves
- pinch crushed red pepper flakes Stonemill brand
Instructions
- Place the chicken breasts in a dish or bowl. In a separate bowl, whisk together the olive oil, balsamic vinegar, garlic, basil and a big pinch of salt and pepper. Pour the mixture over the chicken. Marinate in the refrigerator for at least 30 minutes or oven night. Remove the chicken from the fridge about 30 minutes before grilling.
- Preheat the grill to the highest setting. You want it to heat for about 10 or 15 minutes.
- Once the grill is hot, take each chicken breast out of the marinade, letting the excess drop off. Place the chicken directly on the grill. Grill for 5 minutes (with the lid closed), then flip and grill for 3 minutes more.
- Top each chicken breast with a slice of tomato. Top the tomato with a slice of fresh mozzarella. Close the lid to the grill and for 1 minute or so, until the cheese just begins to melt. You don’t want it to melt into the grill grates, so pull it off before it starts to drip off the chicken!
- Place a blanket of warm tomato sauce on a large plate. Place the chicken directly on the sauce. Sprinkle the chicken with some crushed red pepper, some freshly grated parmesan and fresh basil leaves. Serve with extra sauce for dipping!
