  • olive oil for grilling

Marinade:

  • 1/2 cup extra virgin olive oil
  • 1/3 cup red wine vinegar
  • 2 tablespoons lemon juice fresh
  • 1 tablespoon lemon zest
  • 2 tablespoons parsley chopped, fresh
  • 1 tablespoon onion fresh, minced
  • 3 cloves garlic minced garlic, fresh
  • 1 teaspoon basil dried
  • 1/2 teaspoon oregano dried
  • 1/2 teaspoon italian herbs
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon sugar
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon black pepper

Instructions

  1. Combine all marinade ingredients in a large bowl or freezer bag.
  2. Pierce chicken breasts with a fork a few times and place it into the marinade.
  3. Marinate for 30 minutes or up to 4 hours before cooking.
