Grilled Chicken Rub

This Grilled Chicken Rub blends garlic powder, dried oregano, paprika, rosemary, brown sugar, salt, and black pepper to season poultry or pork before grilling. The mixture imparts a fragrant, slightly sweet, and savory crust when rubbed on and allowed to rest, enhancing the flavor and texture of grilled meats.

Description

The rub combines dried herbs and spices with brown sugar to create a balance of aromatic, sweet, and savory notes. Garlic powder adds pungency, oregano and rosemary contribute herbal depth, paprika brings mild earthiness and color, while salt and black pepper season the meat thoroughly. Brown sugar fosters caramelization and a slight sweetness when grilled.

After rubbing generously onto chicken, pork, or turkey, the meat is left at room temperature up to an hour, helping the flavors penetrate and the rub to adhere. Once grilled, this rub forms a flavorful crust and enhances moisture retention.

For those preferring a spicier profile, ground cayenne pepper can be added in small increments, starting with 1/2 teaspoon to taste. The rub can be stored in a sealed container for future use, making it convenient for quick seasoning.

Ingredients

Servings

For the Rub:

  • 4 tablespoons garlic powder
  • 4 tablespoons oregano dried
  • 4 tablespoons paprika
  • 4 teaspoons rosemary dried
  • 4 tablespoons brown sugar
  • salt to taste, see instructions, freshly ground
  • black pepper to taste, see instructions, freshly ground

Instructions

  1. In a small bowl, combine garlic powder, oregano, paprika, rosemary, and salt and pepper to taste (I like 5 teaspoons salt and about 1 tablespoon pepper). Store in a clean glass jar with a tight-fitting lid until ready to use.
  2. Rub the mix generously all over the chicken, pork, or turkey and let sit at room temperature for up to 1 hour.

Notes

  • Adjust the salt and pepper to taste; the suggested amounts provide a well-seasoned balance for most cuts.
  • For a spicy variation, add 1/2 teaspoon ground cayenne pepper and increase if desired after tasting.
  • Allow meat to rest with the rub for up to one hour at room temperature to maximize flavor absorption before grilling.
