Grilled Chicken Strawberry Poppyseed Salad
Description
The recipe begins by marinating boneless skinless chicken breasts in olive oil, balsamic vinegar, garlic, salt, and pepper. After marinating, the chicken is grilled to retain juiciness and impart smoky flavor, then sliced thinly. The salad base uses torn butter lettuce tossed with strawberries, pineapple, blueberries, mandarin oranges, and roasted chopped cashews, offering sweetness and crunch.
The citrus poppyseed dressing is made by blending champagne vinegar, orange juice, lime juice, honey, shallot, garlic, mustard powder, and seasonings, then emulsifying olive oil into the mixture before folding in poppy seeds. This dressing adds fresh acidity and a hint of sweetness that complements the fruit and chicken.
Serving this salad chilled or at room temperature provides a refreshing contrast of flavors and textures. The dressing keeps well refrigerated for several days, making this a practical salad for meal prepping.
