Grilled Chicken Tenders Recipe with Chipotle Lime Yogurt

This quick and easy grilled chicken tenders recipe is taken from plain to phenomenal with the addition of a crave-worthy chipotle lime yogurt.

Servings

The Yogurt:

  • 1 plain Greek yogurt 6 ounce container
  • ½ chipotle pepper seeded & minced
  • 1 teaspoon adobo sauce from chipotle pepper can
  • ½ teaspoon lime juice fresh
  • teaspoon salt

The Chicken:

  • 1 ½ tablespoons olive oil
  • 4 teaspoons lime juice fresh
  • ½ teaspoon cumin ground
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ¼ pounds chicken tenderloin

Instructions

The Yogurt:

  1. In a medium bowl, combine the yogurt, chipotle pepper, adobo sauce, lime juice and salt. Stir to combine completely.

The Chicken:

  1. Using skewers for the chicken is optional. If you are using wooden skewers, soak them in warm water for 30 minutes prior to using to prevent them from catching fire on the grill.
  2. Preheat the grill to medium-high heat. Lightly oil the grill.
  3. In a shallow dish, whisk together the olive oil, lime juice, cumin, smoked paprika, salt and pepper.
  4. Add the chicken tenders and turn to coat. Marinate for 15 minutes.
  5. Remove the chicken tenders from the marinade and grill until the chicken is just cooked through, about 2 minutes per side. (If using skewers, thread the chicken onto the skewers before grilling.)
  6. Serve the chicken tenders with the chipotle lime yogurt.
