Grilled Chicken with Avocado Tomato Salad
Description
Grilled Chicken with Avocado Tomato Salad involves marinating chicken breasts with olive oil, fresh lime juice, ground cumin, kosher salt, and freshly ground black pepper. After marinating at room temperature for 30 to 45 minutes, the chicken is grilled over high heat, turning frequently until no longer pink inside, usually 10 to 15 minutes. This method imparts a smoky flavor and crisp skin.
The grilled chicken is topped with wedges of creamy avocado, slices of heirloom tomato, and fresh corn cut off the cob. A cilantro vinaigrette dresses the salad components, providing herbal brightness and acidity. If cilantro is not preferred, basil vinaigrette is suggested as an alternative.
This combination pairs a warm protein with fresh, vibrant salad elements, making it suitable for a satisfying lunch or dinner.
Ingredients
For the Chicken:
- ¼ cup extra-virgin olive oil
- ¼ cup lime juice fresh
- 1 tablespoon cumin ground
- ½ teaspoon kosher salt
- ½ teaspoon black pepper freshly ground
- 4 chicken breast with skin
For the Topping:
- 2 avocado cut into wedges
- 3-4 heirloom tomatoes cut into ½ inch slices
- 2 corn on the cob
- 1 cilantro vinaigrette recipe
Instructions
- Combine the ingredients for the chicken marinade in a bowl and stir to combine. Add the chicken and marinate for 30-45 minutes at room temperature.
- Heat a grill to high heat. Lift chicken from marinade (discard marinade) and grill chicken, turning often, until no longer pink in center, 10 to 15 minutes.
- Transfer chicken to a platter and top with the avocados, cherry tomatoes and raw corn cut off the cob. Serve with the cilantro vinaigrette and season with salt and pepper.
Notes
- Allow chicken to marinate at room temperature for better flavor absorption and even cooking.
- Use a basil vinaigrette as an alternative if you do not like cilantro’s flavor.
- Ensure chicken is cooked fully by checking for no pinkness in the center, turning often to avoid burning.
