Grilled Chipotle Chicken with Pineapple Salsa

Ingredients

  • 2 pounds chicken breast boneless skinless
  • 3 tablespoons lime juice
  • 2 tablespoons maple syrup
  • 2 teaspoons adobo sauce
  • 1 chipotle pepper from a can of chipotle in adobo
  • ¼ cup olive oil
  • ½ teaspoon salt

Pineapple Salsa

  • 1 ½ cups pineapple chopped, fresh
  • 2 teaspoons lime juice
  • 1 teaspoon maple syrup
  • ¼ cup red onion diced
  • 2 tablespoons cilantro finely chopped, fresh
  • 2 tablespoons jalapeño finely diced
  • ¼ teaspoon salt

Instructions

  1. Add 2 pounds boneless skinless chicken breasts, 3 tablespoons lime juice, 2 tablespoons maple syrup, 2 teaspoons adobo sauce , 1 chipotle pepper from a can of chipotle in adobo, ¼ cup olive oil, and ½ teaspoon salt in a large ziplock bag. Seal the back tightly closed and massage the marinade into the chicken. Refrigerate for 2-5 hours.
  2. After the chicken has marinated, preheat the grill to medium-high heat.
  3. Remove the chicken from the marinade and let any excess drip off. Grill the chicken for about 10-12 minutes, flipping it over halfway through, until the thickest part reaches 165 degrees Fahrenheit and it has a nice char on it.
  4. Prepare the pineapple salsa by combining 1 ½ cups chopped fresh pineapple , 2 teaspoons lime juice, 1 teaspoon maple syrup, ¼ cup diced red onion, 2 tablespoons finely chopped fresh cilantro , 2 tablespoons finely diced jalapeno, and ¼ teaspoon salt. Season with additional salt and pepper to taste.
  5. Serve the chicken warm with pineapple salsa on top.
