Grilled Cilantro Lime Chicken

Grilled Cilantro Lime Chicken features boneless, skinless chicken breasts marinated in a blend of fresh cilantro, lime juice and zest, garlic, ground coriander, salt, pepper, and olive oil. The marinade infuses bright, tangy, and herbal flavors that complement the smoky char from grilling. Served with additional cilantro and lime wedges, it makes a fresh and savory main dish.

Description

This recipe combines a marinade made by blending fresh cilantro, lime zest and juice, garlic, coriander, salt, pepper, and olive oil into a smooth paste. The chicken breasts are coated in this marinade and refrigerated for at least one hour, up to overnight, to allow the flavors to penetrate and tenderize the meat. Grilling over medium-high heat cooks the chicken evenly, producing a slight char while maintaining juicy tenderness inside. The marinated chicken breasts can be garnished with fresh cilantro leaves and lime wedges to add brightness and enhance the presentation.

This preparation suits quick weeknight grilling or weekend cookouts. Thinly sliced chicken breast speeds cooking and promotes even flavor distribution across each piece. It pairs well with simple grilled vegetables, rice, or salad.

To prevent sticking, brush the grill before cooking. If sealable bags are unavailable for marinating, shallow non-reactive containers such as glass or stainless steel bowls can be used instead.

Ingredients

Servings
  • 8 chicken breast about 2 lbs, boneless skinless

Marinade:

  • 2/3 cilantro bunch fresh
  • lime zest of 1
  • 3 tablespoon lime juice about 2 limes
  • 3 cloves garlic chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil

Optional Garnishes:

  • cilantro leaves
  • lime wedges

Instructions

  1. Combine all the marinade ingredients ( 2/3 bunch fresh cilantro, zest of 1 lime, 3 tablespoon lime juice, 3 cloves garlic- minced,1 teaspoon ground coriander, 1 teaspoon salt, 1 teaspoon black pepper, and 2 tablespoons olive oilinto a blender or food processor and pulse until it forms a smooth mixture.
  2. Add chicken breast to a large freezer-safe sealable bag, followed by the marinade. Press the air out of the bag and seal it tightly. Now gently press to the marinade around the chicken cutlets to coat well.
  3. Allow it to marinate in the refrigerator for at least 1 hour to overnight. Marinating overnight will enhance the juiciness and flavor of the chicken.
  4. Next, brush the grill or a heavy-bottomed pan with some oil and heat over medium-high heat. Place the marinated chicken breast onto the hot grill.
  5. Grill without moving them around, about 5 minutes on each side, or until charred and cooked through.
  6. Garnish with fresh Cilantro leaves and serve with Lime wedges if desired.

Notes

  • Use thin-sliced chicken breasts for quicker, more even grilling.
  • Marinate for at least one hour, preferably overnight, to enhance flavor and juiciness.
  • Always marinate chicken in the refrigerator to maintain food safety.
  • Brush the grill with oil before cooking to prevent the chicken from sticking or tearing.
  • If sealable bags are unavailable, use shallow non-reactive containers like glass or stainless steel for marinating.
