Grilled Cilantro Lime Chicken

This grilled chicken breast recipe marinates boneless chicken in a mixture of olive oil, honey, fresh garlic, lime juice, and chopped cilantro. The marinade imparts a bright citrus and herb flavor with subtle sweetness. Grilling develops a nicely charred exterior while keeping the chicken juicy. It's served immediately for best texture and flavor.

Description

Grilled Cilantro Lime Chicken starts by seasoning boneless chicken breasts with kosher salt. They are then marinated in a blend of olive oil, raw honey, minced garlic, fresh lime juice, and minced fresh cilantro. The chicken is sealed in a bag to evenly absorb the flavorful marinade for 2 hours up to 2 days.

Grilling the chicken for about 7 to 9 minutes per side cooks it to a safe internal temperature of 165°F while creating a slightly charred crust. The lime juice and honey balance bright acidity with gentle sweetness, while cilantro adds an herbal freshness. Garlic enriches the savory depth.

This grilled chicken is ideal served immediately and pairs well with fresh salads, rice, or grilled vegetables for a light meal.

Fresh cilantro is preferred for the marinade. If only dried cilantro is available, use approximately one-third the amount to maintain balanced flavor.

Ingredients

Servings
  • 4 chicken breast boneless
  • 6 tablespoons olive oil
  • 2 1/2 tablespoons honey raw
  • 4 garlic minced, large cloves
  • 1 cilantro minced, bunch fresh
  • 3 limes juiced
  • 2 -3 teaspoons kosher salt to season chicken

Instructions

  1. Generously salt both sides of the chicken breasts and place in a large zip lock bag or food saver bag.
  2. In a medium bowl, mix the remaining ingredients.
  3. Add mixture to the bag with the chicken and carefully move around the chicken in the bag to ensure they are all coated with the marinade.
  4. Remove as much air as possible from the bag, seal, and marinate for at least 2 hours and up to 2 days.
  5. Grill for about 7-9 minutes on each side, until internal temp is 165 degrees F or juices run clear.
  6. Serve immediately and enjoy!

Notes

  • Use fresh cilantro for best flavor; if substituting dried, use about one-third the amount of fresh called for.
  • A bunch of fresh cilantro equates to about 3/4 cup or 12 tablespoons of minced leaves.
