  • 4 tablespoons butter softened, unsalted
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cinnamon
  • pinch salt
  • 4 lices bread whatever your favorite variety is
  • 1/2 cup ricotta cheese
  • 1 cup figs halved, fresh
  • cinnamon for sprinkling
  • almonds sliced for crunch

Instructions

  1. Preheat your grill to the highest setting.
  2. To make the butter, stir together the butter, sugar, cinnamon and salt until combined and smooth. Spread each side of the bread slices with the butter.
  3. Place the bread on the grates and grill until toasted, about 1 to 2 minutes per side.
  4. Place the ricotta cheese in a food processor and blend until creamy and smooth. If you want to add any seasonings or extracts, now is the time! I just like it plain.
  5. To serve, add a scoop of the ricotta with the toast and top with fresh figs and a sprinkle of cinnamon. YUM. You can also add a drizzle of honey if you wish and some sliced almonds for crunch!
