Grilled Corn

Grilled Corn can be prepared using two methods: with husks or husked. The husk-on method involves peeling back the corn husks to remove silks, soaking the corn to prevent burning, and grilling with husks intact. The husked method grills the corn directly, allowing char marks to develop. Both methods yield tender, smoky ears of corn that are simply seasoned with butter, salt, and pepper for a straightforward, rustic flavor.

Description

Grilled Corn is a classic summer preparation that highlights fresh sweet corn on the cob. In the husk-on method, the corn is partially husked and soaked to protect the husks from burning and to steam the kernels during grilling. Alternatively, shucked corn is grilled directly, which produces a nice char and adds a smoky texture. Grilling typically takes about 15 minutes with regular turning to ensure even cooking. Finished corn is served hot with butter and seasonings, making it a simple side or snack that showcases the natural sweetness of the corn enhanced by the grill's heat.

The flavor depends largely on whether the husks are kept intact; husked corn will have a smokier, slightly charred note, while husk-on corn retains more moisture and sweetness. Both ways allow the use of basic seasonings to complement the corn without overwhelming its taste.

This grilled corn is ideal as a side dish for barbecues or casual outdoor meals. Its straightforward preparation and real corn flavor make it approachable and satisfying.

Ingredients

Servings
  • 4 to 8 ears corn fresh sweet
  • butter
  • salt sea salt; freshly ground black pepper
  • black pepper sea salt; freshly ground black pepper

Instructions

Husk-on method

  1. Peel back the corn husks, leaving them attached at the base of each ear of corn. Remove the silks as best you can and close the husks back over the corn cobs. Soak the corn in a large pot of cold water for 10 minutes. This will prevent the husks from burning too much on the grill. Drain and pat dry.
  2. Preheat a grill to medium-high heat. Place the corn on the grill and cook, turning every 3 to 5 minutes, until all sides of the corn are cooked, about 15 minutes. Remove from the grill and tie back the husks to use as a handle. Serve with butter, salt, and pepper.

Husked method

  1. Shuck the corn and remove the silks.
  2. Preheat a grill or grill pan to medium-high heat. Place the corn on the grill and cook, turning every 3 to 5 minutes, until all sides of the corn are cooked and light char marks form, about 15 minutes. Remove from the grill and serve with butter, salt, and pepper.
