Grilled Corn in Foil

Grilled Corn in Foil is prepared by wrapping whole corn ears tightly in heavy-duty foil and grilling them over medium-high heat until tender and lightly charred. Served with a lemon dill butter made by mixing softened butter with fresh lemon juice, chopped dill, salt, and pepper, this combination offers bright, herbaceous flavors balanced against smoky-sweet corn, making it a flavorful summer side dish.

Description

The corn is prepared without any butter or oil inside the foil, avoiding flare-ups during grilling. Wrapping the corn fully in heavy-duty or double-layered foil helps it steam and cook evenly while preserving natural corn sweetness and moisture. The grilling time around 15 to 20 minutes, with rotation every few minutes, ensures even cooking and prevents scorching.

Meanwhile, lemon dill butter is creamed and combined with fresh lemon juice and dill until smooth, providing a citrusy, fresh counterpoint to the charred corn. Applied immediately after grilling, it melts into the kernels, enhancing the sweetness and adding freshness.

This preparation suits outdoor grilling occasions and can be adapted to groups by breaking corn into portions before wrapping. The absence of oil or butter inside the wrap keeps grilling clean and controlled.

Ingredients

Servings

For the Grilled Corn:

  • 6 corn ears

For the Lemon Dill Butter:

  • 4 Tbsp unsalted butter softened at room temp, 1/2 stick
  • 1/4 tsp salt
  • Pinch black pepper or to taste
  • 1 Tbsp dill finely chopped, fresh
  • 1 Tbsp lemon juice fresh

Instructions

How to Make Lemon Dill Butter:

  1. Cream 4 Tbsp butter with a fork in a medium bowl.
  2. Stir in 1/4 tsp salt, pinch of pepper and 1 Tbsp fresh lemon juice and mix until smooth. The lemon juice will seem like it isn't blending, but keep mixing for a couple minutes and it will happen.
  3. Stir in fresh chopped dill until well incorporated. Keep the prepared butter at room temp until ready to serve corn.

How to Grill Corn:

  1. Preheat Grill to Med/High. Shuck corn. Leave the corn whole or break corn into halves or thirds if serving a large crowd. Wrap each ear of corn with a generous sheet of heavy duty foil making sure all sides are covered. If using regular kitchen-standard foil, double wrap the corn so it doesn't scorch.
  2. Grill foil-wrapped corn with the lid closed over medium/high heat, rotating the corn every 2 -3 minutes to keep from scorching. Grill for 15-20 minutes. Ours was done at 18 minutes. Once corn is finished grilling, remove foil and brush generously with lemon dill butter while warm.

Notes

  • Do not add butter or oil inside the foil-wrapped corn to avoid flare-ups on the grill.
