  • 3 ears white corn or Yellow Corn
  • 1 jalapeño diced finely
  • 2 green onions chopped
  • 1 medium tomato diced
  • 1/4 cup cilantro chopped
  • 1 lime juiced
  • salt to taste
  • black pepper to taste
  • tortilla chips

Instructions

  1. Preheat indoor or outdoor grill to high heat. Shuck corn. Place on the hot grill until nice and toasty, turning as needed. Remove corn and let cool.
  2. While corn is cooling, you can chop the remaining veggies and place into a large bowl. Once the corn is cool enough to handle, cut the corn off the cob. Once kernels are removed, run the back of your knife down the husk to remove the bottom parts of the corn.
  3. Stir corn into the bowl with other ingredients and season with salt and pepper. Serve with corn chips.
