Description
Grilled Corn with Herb Butter starts by mixing softened butter with a fresh herb blend including basil, parsley, and coriander, plus crushed garlic, salt, and pepper. This mixture is rubbed onto halved sweetcorn ears before wrapping them in foil for grilling. The foil packet method steams and grills the corn simultaneously over the BBQ, enhancing flavor while keeping the kernels juicy and tender.
Once cooked, the corn is unwrapped and placed on a serving platter, where it is sprinkled with additional fresh herbs and crumbled soft goat cheese. The cheese adds creaminess and a mild tang that complements the herb butter infusion. The grilling imparts subtle smokiness without drying out the corn.
This dish pairs well with grilled meats or as a side during summer meals. The notes emphasize selecting fresh, sweet corn and caution against overcooking to prevent chewiness. Ingredients
- 2 sweetcorn leaves removed and each ear cut in half, ear
- 2 tablespoon butter
- 1 handful mixed fresh herbs (we used basil, parsley and coriander - but you can use any)
- 2 garlic crushed, clove
- 1 pinch sea salt
- 1 pinch black pepper
- 20 g goat cheese crumbled, soft
Instructions
- In a bowl, mix together 2 tablespoon Butter, 1 handful Mixed fresh herbs, 2 Garlic clove and 1 pinch Sea salt and ground black pepper.
- Rub the butter mixture over 2 Sweetcorn ear and then put each piece on a square of aluminium foil.
- Wrap the foil up so it is sealed and put them on the BBQ for 30 minutes, turning half way.
- Take them out of the foil and put them on a platter. Sprinkle then with more herbs and 20 g Soft goats cheese.
Notes
- Use the freshest sweetcorn available to ensure natural sweetness and tenderness.
- Avoid overcooking the corn to prevent a tough or chewy texture.
- Add red chili flakes before serving for a spicy kick.
- If there are leftovers, slice the kernels off the cob and store in an airtight container for up to two days.
