  • 5 ounces arugula
  • 8 fig halved lengthwise, fresh
  • olive oil to taste
  • kosher salt
  • black pepper
  • 2 ounces goat cheese crumbled
  • 1/4 cup pistachio shelled, unsalted

Vinaigrette

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 1/2 tablespoon olive oil
  • 1 tablespoon maple syrup
  • kosher salt fresh ground, to taste
  • black pepper fresh ground, to taste

Instructions

  1. Heat grill to medium high heat and oil the grill grates. Brush the cut side of the figs with olive oil and sprinkle with salt and pepper. Grill the figs cut side down for approximately 2 minutes or until they have grill marks and soften slightly.
  2. In a large serving bowl add the arugula and top with crumbled goat cheese, the grilled figs and pistachios.
  3. Whisk together all of the ingredients for the vinaigrette and either pour over the salad just before serving or serve it on the side.
