The flank steak is soaked for at least an hour, and up to 24 hours, in a marinade combining low sodium soy sauce, fresh lemon juice, olive oil, Worcestershire sauce, minced garlic, dried Italian seasoning, black pepper, kosher salt, and onion powder. This combination infuses the meat with an array of salty, tangy, and aromatic flavors.
Grilling over medium-high heat for 5-7 minutes per side cooks the steak to medium with a balance of charred crust and juicy interior. Resting before slicing allows juices to redistribute. Cutting thin slices against the grain helps break down muscle fibers for a more tender bite.
This preparation suits outdoor grilling but can also be adapted indoors on a grill pan or under the broiler. The marinade can be stored refrigerated for up to five days, allowing flexibility in preparation timing. Before using, bring the oil in the marinade to room temperature to avoid solidification.
Ingredients
- 1/3 cup soy sauce low sodium is ok
- 1/4 cup lemon juice fresh squeezed
- 1/2 cup olive oil
- 1/4 cup Worcestershire sauce
- 2 teaspoons garlic minced
- 2 teaspoons Italian seasoning dried
- 1 teaspoon black pepper
- 1/2 teaspoon kosher salt
- 1/2 teaspoon onion powder
- 2 pounds flank steak
Instructions
- Place the soy sauce, lemon juice, olive oil, Worcestershire sauce, garlic, Italian seasoning, pepper, salt and onion powder in a bowl or resealable gallon sized bag . Mix to combine.
- Add the flank steak to the marinade. Marinate for at least 1 hour, or up to 24 hours.
- Heat a grill to medium high heat. Add the steak and cook for 5-7 minutes per side or until a thermometer inserted into the thickest part of the meat registers 145 degrees F for medium. Let the steak rest for 5 minutes, then slice against the grain and serve.
Notes
- The marinade can be prepared up to 5 days in advance and stored in the refrigerator.
- Olive oil in the marinade may solidify when chilled; allow it to sit at room temperature for 10-15 minutes before use.
- Low sodium soy sauce can be used to reduce salt content without affecting flavor.
