Marinade

  • 1/3 cup soy sauce
  • 2 Tablespoons balsamic vinegar
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • lemon about 1/4 cup, juice of 1

Steak & Mushrooms

  • 1 flank steak about 1 1/2 to 2 pounds
  • 16 ounces baby bella mushroom cut in half or quarters if large
  • 2 Tablespoons butter salted
  • 2 cloves garlic minced
  • 1 Tablespoon olive oil
  • salt
  • black pepper
  • 1 Tablespoon rosemary chopped, fresh
  • 1 cup beef broth divided
  • 1 teaspoon cornstarch

Instructions

  1. Combine marinade ingredients and add to steak. Marinate at least 2 and up to 24 hours.
  2. Grill over high heat for 6 minutes per side until 120-125°F for rare and 130-140°F for medium-rare.
  3. Let it rest for 10 minutes before thinly slicing against the grain.
  4. Combine 2 tablespoons beef broth with cornstarch to make a slurry.
  5. Add mushrooms to a hot dry pan and cook 2-3 minutes. Season with salt and pepper.
  6. Add butter, garlic, rosemary, and olive oil.
  7. Add broth and cook 3-4 minutes.
  8. Add slurry, cook until slightly thickened.
  9. Slice meat against grain and serve with mushrooms.
