Grilled Garlic Chicken Skewers

These grilled garlic chicken skewers combine marinated chicken chunks with optional vegetables like bell pepper, onion, and zucchini, all threaded onto soaked bamboo skewers for even grilling. The marinade includes mayonnaise, ranch dressing, and finely chopped garlic, offering a creamy, tangy base that soaks into the chicken. Grilling over medium heat until cooked through ensures a tender, juicy texture with a slightly charred exterior.

Description

Grilled Garlic Chicken Skewers feature bite-sized pieces of chicken breast marinated in a mixture of mayonnaise, ranch dressing, and garlic before being grilled alongside optional vegetables. The marinade imparts moisture and a mild tangy flavor while finely chopped garlic adds aromatic depth. Soaking bamboo skewers in water prevents burning on the grill, and cooking at medium heat ensures even, thorough cooking. Turning the skewers periodically achieves balanced browning on all sides.

The result is tender chicken with a moist interior and subtly smoky edges, complemented by the natural sweetness and light char of the grilled bell pepper, onion, and zucchini. These skewers work well as a main dish alongside rice, salad, or bread. The flexibility to exclude vegetables or adjust seasonings allows customization based on preference.

Svetlana's notes suggest being cautious with salty seasonings since the marinade already contains salt, and that adding a dash of paprika can suit tastes. Vegetables can be seasoned separately if desired to enhance their sweetness and grill flavor.

  • Add a dash of paprika for extra flavor if preferred.
  • You can season vegetables before skewering to enhance their natural sweetness.
