Description
The process starts by tossing limes halved, peeled shallots, jalapeño pepper, and cherry tomatoes with neutral cooking oil and placing them on a preheated grill. The ingredients are grilled just long enough to get marks on one side, imparting a smoky flavor without fully cooking the vegetables.
After cooling, the shallots, pepper, and tomatoes are coarsely chopped and combined with mashed ripe avocado. The grilled lime halves are squeezed over the mixture, adding fresh acidity complemented by the smokiness. Optional feta cheese adds saltiness and a slight tang to the creamy guacamole.
This version enhances traditional guacamole with layered flavors and textures, suitable as a dip or topping for various dishes where a smoky note is desired.
Ingredients
- 2 lime cut in half
- 2 medium shallot peeled and cut in half
- 1 jalapeno pepper
- 1 handful cherry tomato
- 1 tablespoon neutral cooking oil generic cooking oil
- 3 large avocado ripe
- feta cheese optional, ¼ cup
- salt to taste, sea salt
Instructions
- Oil and preheat your grill to medium-high. Place the limes, shallots, jalapenño pepper, and cherry tomatoes in a bowl and toss with the oil.
- Place the limes on the grill cut side down. Toss the rest of the veggies on the grill. Remove the veggies when grill marks appear on ONE side. You want the smoky flavor but you don't want them to be completely cooked.
- When the shallots, pepper, and tomatoes are cool enough to touch, roughly chop them.
- Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Squeeze the grilled limes into the bowl and add the chopped veggies and, if you're using, the feta cheese. Using a fork, mash the avocados and mix in the veggies. Taste the guacamole and season to taste with sea salt.
