Grilled Halloumi

Grilled Halloumi features firm, brined cheese sliced thick and cooked over medium heat until golden brown and crisp on the outside while maintaining a soft and slightly chewy texture inside. This cooking method highlights the cheese's salty and rich flavor. Served alongside fresh tomato, cucumber, mint, and a sprinkle of zaatar with olive oil, it makes a simple yet satisfying appetizer or light meal accompaniment.

Description

Grilled Halloumi begins with patting thick slices of halloumi cheese dry to ensure proper browning. The cheese is then pan-grilled in olive oil over medium heat, developing a well-browned crust that contrasts with the cheese's creamy texture inside. The toppings of fresh tomato, cucumber, and mint bring brightness and freshness that balance the salty richness of the cheese. A touch of zaatar and olive oil finish the dish, adding herbal and savory notes.

This grilled cheese is best enjoyed immediately to fully appreciate its soft interior and crisp edges. It can be served as an appetizer or as part of a mezze platter alongside fresh vegetables. The recipe is straightforward and requires minimal ingredients, focusing on the texture and flavor of quality halloumi and simple accompaniments.

For storage, keeping any leftovers in an airtight container in the refrigerator up to three days is possible, but the cheese may dry out and become tougher. A grill pan or heavy skillet will give the best results, creating a nicely caramelized surface on the cheese slices.

Ingredients

Servings
  • 8 ounces halloumi cheese
  • 1 tablespoon olive oil plus more for serving
  • tomato sliced, for serving
  • cucumber sliced, for serving
  • mint for serving, fresh
  • zaatar for serving

Instructions

  1. Drain the halloumi and slice in wide thin pieces, about 8 slices. Pat the slices very dry with paper towels.
  2. Heat the olive oil in a grill pan or heavy skillet over medium heat. Add the sliced halloumi and cook undisturbed until the bottoms are well-browned, about 3-4 minutes.
  3. Use a spatula or tongs to flip the halloumi slices and cook on the other side until browned, about 2-3 more minutes.
  4. Plate the grilled halloumi with sliced tomatoes, sliced cucumbers, fresh mint, zaatar and a drizzle of olive oil, if desired

Notes

  • Pat the halloumi slices very dry before grilling to achieve a good sear and prevent sticking.
  • Enjoy grilled halloumi immediately for the best texture; storing refrigerated for up to 3 days will cause it to dry and harden.
  • Use a heavy skillet or grill pan to create a crisp, browned crust on the cheese.
