Ingredients
- 1 tablespoon honey
- 2 tablespoons lemon juice from about ½ medium lemon, freshly squeezed
- salt to taste
- black pepper to taste
- ¼ cup extra virgin olive oil plus more for coating the Halloumi and peaches
- 8 ounces halloumi cheese sliced ¼ inch thick
- 2 peach quartered if large and halved if small (*see note, or 3-4 small peaches or nectarines, large
- 4 cups arugula loosely packed
- ½ - 1 jalapeno pepper very thinly sliced (remove seeds or omit if sensitive to heat)
Notes
- *Sometimes it's difficult to remove the pits from peaches. If this happens to you, just do your best to cut around the pits. They may not look pretty, but they will still taste delicious.
