Grilled Herb Pomegranate Lamb Steaks

These Grilled Herb Pomegranate Lamb Steaks feature lean, boneless lamb leg steaks marinated in a mix of pomegranate molasses, Worcestershire sauce, fresh rosemary, olive oil, salt, and pepper. The marinade imparts tangy and herbaceous notes, and the steaks are grilled to develop a smoky char with a tender interior. This preparation highlights the balance of sweet, savory, and aromatic flavors on the lamb.

Description

Lamb leg steaks are coated in a marinade blending the tart sweetness of pomegranate molasses with the umami of Worcestershire sauce, punctuated by fresh rosemary and olive oil. Allowing the meat to marinate for 20 minutes helps the flavors penetrate the surface. Grilling over medium heat develops a caramelized exterior and char marks while cooking through the meat without drying it out. Resting the steaks after grilling lets juices redistribute, resulting in a more tender and flavorful bite.

This dish works well served as a main course paired with grilled vegetables or a light salad. The marinade's distinctive pomegranate element offers bright acidity to complement the rich lamb flavor and herbs.
