Grilled Herb Pomegranate Lamb Steaks
Description
Lamb leg steaks are coated in a marinade blending the tart sweetness of pomegranate molasses with the umami of Worcestershire sauce, punctuated by fresh rosemary and olive oil. Allowing the meat to marinate for 20 minutes helps the flavors penetrate the surface. Grilling over medium heat develops a caramelized exterior and char marks while cooking through the meat without drying it out. Resting the steaks after grilling lets juices redistribute, resulting in a more tender and flavorful bite.
This dish works well served as a main course paired with grilled vegetables or a light salad. The marinade's distinctive pomegranate element offers bright acidity to complement the rich lamb flavor and herbs.
Ingredients
- For the lamb steaks:
- 2 Lamb leg steak lean, boneless, 150g/5oz each
- For the Marinade:
- 1.5 tbsp pomegranate molasses
- 1 tbsp Worcestershire sauce
- 1 tbsp rosemary freshly chopped
- 1 tbsp olive oil
- salt
- black pepper freshly ground
Instructions
- Pre-heat the bbq (or grill if using) to medium heat.
- Put the lamb steaks in a non-metallic dish.
- Combine all the ingredients for the marinade, pour over the steaks and mix till the steaks are coated. Cover and let marinate in the fridge for 20 mins.
- Cook the lamb steaks on the barbecue (or grill) for 6-8 minutes on each side, or until any meat juices run clear. Transfer the steaks to a warm plate and leave to rest for a few mins before serving
